Some weeks, I have so much motivation to come up with new recipes and other weeks it’s a lot more of “let’s just see what’s in the fridge and make it work”. This week was definitely the latter… these 5 easy healthy meals are a mix of easy throw-together meals and a couple of go-to favorites I know I can whip up without thinking twice.
If you’re looking for healthy, quick, and actually delicious meal ideas, here are 5 that hit my table (and my stomach) this week!!

The MVP of busy weeknight dinners. This one started with Trader Joe’s pre-cooked chicken meatballs and quickly turned into a fridge purge — purple onion, broccolini, carrot, bell pepper — all sautéed in olive oil with a splash of coconut aminos. I served it over microwave rice and topped it with a generous spoon of Momofuku chili crunch for some heat.
The best part? You can make this with literally any veggies, protein, and sauce combo you have on hand. It’s the ultimate “use what you’ve got” meal.
Breakfast that feels like a diner plate, but healthier and faster. I scrambled eggs with chopped chicken sausage, spinach, and bell pepper (nothing fancy, just whatever was in my fridge). I paired it with a collagen iced latte and a juicy peach for a balanced, protein-packed morning.
This is a go-to breakfast for me and also one of my favorite “clean out the fridge” meals. The veggie + protein combos are endless.
Craving a CAVA bowl but don’t want to leave the house? Same!! I threw this together in minutes: microwave rice, Trader Joe’s chicken meatballs, a base of crisp lettuce, a cucumber-feta salad (cucumber + feta + olive oil + lemon juice + Harmony Mediterranean Blend), pickled red onions, and a big dollop of Sunny Calabrian Tahini for that spicy kick.
Mix, match, and swap ingredients based on what you like – kale, arugula, or chickpeas would also be amazing here.
Protein pancakes that don’t taste like cardboard? Yes, please. This batch makes enough for two, but honestly, I could eat them all myself.
