I meal prep because it makes my life easier (anddd also because I’m team leftovers). So I’m here to share the kind of meal prep recipes that actually make me excited to open the fridge during the week.
When I have balanced, protein-forward meals ready to go, I make better choices without having to think about it. I’m less likely to skip lunch, less likely to snack all afternoon, and way less likely to order something random just because I’m busy.
Plus, as much as I love cooking, I don’t always want to cook three times a day.
Sometimes I’m an ingredient-prep type of girl, but lately I’ve been loving making one or two solid meal prep recipes that reheat well and portioning them out for the week. Nothing extreme. Nothing complicated. Just meals I actually want to eat again.
These five meal prep recipes are the ones I come back to over and over. They’re high in protein, balanced, satisfying, and feel like real indulgent meals. They also hold up really well in the fridge, which is non-negotiable for me.
And yes, they fit perfectly in my favorite individual meal prep containers!!

Perfectly seasoned chicken, sweet corn, rice, and a lighter (but still incredibly delicious) creamy street corn-inspired sauce… it’s the kind of bowl that makes you excited to open your lunch.

This is one of those meals that feels fun but is still super balanced!!

This one is my “clean out the fridge” hero.
Ground beef (or whatever protein I have on hand), green beans (or whatever veggie I have on hand), an Asain-inspired stir-fry sauce (with whatever I have in my fridge)… you get the point. It scratches the takeout itch and I can whip it up with just about anything.
