If you’re looking for an easy meal prep lunch or dinner that feels cozy but still balanced, this chicken sausage orzo bowl is it. It’s creamy, lemony, packed with protein, and made almost entirely in one pan… which we love for busy weeks!!
I used the Classic Roasted Chicken Sausage from The Sausage Project, but you can use any fully cooked chicken sausage you love! The combo of broccoli, lemon, parmesan, and red pepper flakes gives it that bright, fresh flavor that keeps it from feeling heavy. Plus, it reheats perfectly, making it the best meal prep recipe!

Meal Prep: Chicken Sausage Orzo Bowl
Serves 4
Ingredients:
1 package chicken sausage, sliced (I used The Sausage Project)
1 12oz bag broccoli florets
1/2 tbsp olive oil
4 servings orzo
2 cubes frozen garlic
2 cups chicken bone broth
1/2 cup milk of choice
1 tbsp butter
1 tbsp olive oil
2 tsp dried parsley
1 tsp red pepper flakes
2 lemons
1/2 cup parmesan cheese
Directions:
Heat 1/2 tbsp olive oil in a large skillet on medium heat. Once hot, add the chicken sausage and saute a few minutes until slightly browned. Then add the broccoli and cook 3-5 minutes until tender. Remove from pan and set aside.
Add the orzo to the pan to toast for ~60 seconds. Add the garlic and cook until fragrant (30-60 seconds).
Add the broth, milk, butter, olive oil, parsley and red pepper flakes. Mix well and bring to a boil. Once boiling, turn heat to low and cover for ~10 minutes or until liquid is evaporated.
Turn off the heat. Add the juice from 1 lemon and the Parmesan. Mix to combine, then add in the chicken sausage and broccoli. Mix again.
Transfer to four individual sized meal prep containers. Let cool, cover, then store in the fridge for an easy reheat meal.
