Try this easy Chicken & Vegetable Tahini Bowl for a wholesome sheet pan meal ready in under 30 minutes! Tender chicken, colorful veggies, and optional grains topped with creamy tahini sauce. A delicious balance of flavors and nutrition in one bowl.
Chicken & Vegetable Tahini Bowl Recipe
Serves 3-4
Ingredients:
1 head of broccoli, cut into florets
1 small purple onion, sliced
1 medium/large sweet potato, cut into 1/2 inch squares
1 lb chicken breast, cut into chunks
3 tbsp olive oil
1/4 cup tahini,
1 lemon, juiced
1 tsp dijon mustard
1 tsp honey
Salt & pepper to taste
Spinach (about 1 cup per serving)
Optional: cooked quinoa or brown rice
Directions:
Preheat oven to 400F.
Add broccoli, onion, sweet potato and chicken to a baking tray. Coat with olive oil, salt and pepper. Toss to combine.
Bake for about 20 minutes or until chicken is cooked through and veggies are tender.
In a small bowl, mix together the tahini, lemon juice, dijon, honey, and salt & pepper to taste. Starting with 1-2 tbsp at a time, add as much water as needed to thin out the sauce to your preferred consistency.
Add spinach to a bowl and top with chicken/veggie mixture. Note: option to also add a grain like quinoa or brown rice.
