Chickpea Caesar Pasta Salad Recipe
Serves 4
Ingredients:
1 15oz can of chickpeas, drained and rinsed
1 tbsp olive oil
1/4 tsp garlic powder
1/4 tsp paprika
1/4 tsp onion powder
1 box of chickpea or quinoa pasta
1 bunch of kale, washed and chopped
2 tbsp mayo
2 tbsp greek yogurt
1 lemon, juiced
1 tsp dijon mustard
1/4 tsp worcestershire sauce
Dash of garlic powder
Salt & pepper to taste
Directions:
Cook pasta according to package directions.
Coat the chickpeas with olive oil, garlic powder, paprika and onion powder. Toss to combine.
Add chickpeas to an air-fryer and cook for about 6 minutes on 400F or until crispy. (If you don’t have an air-fryer, you can also bake the chickpeas in the oven on 400F for about 20-30 minutes.)
In a small bowl, combine mayo, greek yogurt, lemon juice, dijon, worcestershire, garlic powder and salt & pepper. Mix well.
In a large bowl, combine cooked and cooled pasta, kale, crispy chickpeas and caesar dressing. Enjoy!
