Enjoy a healthy fall twist on a classic recipe with this hearty Sweet Potato Turkey Chili. Packed with wholesome ingredients, this comforting dish is perfect for any chilly fall day.
Sweet Potato Turkey Chili Recipe
Serves 6-8
Ingredients:
1 onion, diced
1 medium sweet potato, cut into small pieces
1 lb ground turkey
2 cloves garlic, minced
2-3 serrano peppers, diced (more if you like it spicy!)
28 oz fire roasted tomatoes
15 oz tomato sauce
15 oz black beans
15 oz kidney beans
1 1/2 cup chicken broth
1 tbsp chili powder
1/2 tbsp oregano
Directions:
Heat olive oil in a large Dutch oven. Once hot, add the onion and sweet potato. Cook about 8-10 minutes until sweet potato starts to soften.
Add the ground turkey and cook until the turkey is mostly browned/cooked through, breaking it up as it cooks.
Add the garlic and Serrano. Saute for 30-60 seconds (until fragrant).
Add the tomatoes, tomato sauce, beans, chicken broth, chili powder and oregano. Mix and simmer for about 15-20 minutes (before removing from heat just make sure sweet potato is fully softened).
