Gluten-Free Honey Sriracha Chicken Bites Recipe
Serves 3-4
Ingredients:
1 lb chicken breast, cut into 1 inch pieces
1 cup quinoa
2-3 eggs
1 cup almond flour
1/4 cup honey
1/4 cup sriracha
1/4 tsp garlic powder
1/2 tsp red pepper flakes
Directions:
Cook quinoa according to package directions. Let cool if possible.
Crack eggs into a bowl and whisk. Add almond flour to a second bowl and cooked quinoa to a third bowl.
Dip a piece of chicken into the almond flour to cover completely. Remove from almond flour and transfer to the egg wash to coat, followed by the quinoa. Place the quinoa coated chicken into the air-fryer.
Repeat step 3 until all of the chicken has been coated in quinoa.
Cook chicken in the air-fryer on 400 degrees Fahrenheit for about 8-10 minutes, flipping halfway through. Once finished, quinoa should be golden and crispy. (Depending on the size of your air-fryer, you may have to cook in multiple batches).
While chicken is cooking, mix together the honey, Sriracha, garlic powder and red pepper flakes.
Coat cooked chicken in the honey Sriracha sauce, serve and enjoy!
