Dairy-Free Vodka Sauce Pasta Recipe
Serves 4
Ingredients:
8oz pasta of choice (here are a few of my favorites)
1/3 cup cashews
2 tbsp olive oil
1 shallot, thinly sliced
2-3 garlic cloves, sliced
4oz tomato paste
10oz diced tomato (about 3/4 of the can)
1/4 cup vodka (optional – I made this recipe without it)
1/2 tbsp red pepper flakes (optional for spice)
1/2 tsp curry powder
Directions:
Cook pasta according to package directions.
Heat olive oil in a pan on medium heat. Once hot, add the shallot. Cook about 3 minutes then add the garlic and cook another 30-60 seconds.
