Indulge in my flavorful low-carb Asian-Style Beef Lettuce Cups – a one-pan meal that’s both easy and healthy for a delicious dinner. Savor the fusion of savory ingredients in this quick and flavorful dish tonight!
Asian-Style Beef Lettuce Cups Recipe
Serves 4
Ingredients:
1 tbsp olive oil or sesame oil
1 lb ground beef
1 bunch scallions, chopped (whites and greens separated)
Heat olive or sesame oil in a pan on medium heat. Once hot, add the carrot, celery and the scallion whites. Saute for a few minutes until scallions are translucent.
While cooking, in a small bowl mix together the teriyaki, Japanese BBQ sauce, gochujang, rice vinegar, garlic and tapioca.
Add the bell pepper and cauliflower rice to the pan. Saute for about 3 minutes until veggies start to get tender and then add the ground beef to the center of the pan, breaking it up as it cooks.
Once beef is almost fully browned, add your sauce to the pan.
Mix everything together, letting the sauce thicken for about 1-2 minutes and then remove from heat.
Serve beef mixture in lettuce cups and then top with the greens of the scallion and chili crunch. Enjoy!!
