1 package pre-cooked chicken meatballs (Amylu meatballs are also really good if you’re not near a Trader Joe’s!)
2 tbsp harissa
Shredded cabbage & carrot (Trader Joe’s has a mixed bag)
Cherry tomatoes, sliced
Mini cucumbers, chopped
Hummus
Tzatziki
Directions:
Heat olive oil in a pan on medium heat. Once hot, add the chicken meatballs and harissa. Saute for 3-5 minutes until golden brown.
Meanwhile, cook rice packets according to package directions.
In each meal prep container, add half of packet of rice, about 4 meatballs, cabbage/carrot mix, tomatoes and cucumber. Top each with a dollop of hummus and tzatziki.
Keep stored in the fridge and enjoy for lunch or dinner throughout the week!
