Heat olive oil in a pan on medium heat. Once hot, crack the egg into the pan and cook to preference. About 3-60 seconds before egg is done cooking, top with cheese to melt.
While egg is cooking, toast the bagel.
Place the spinach on one half of the toasted bagel. Place the egg and cheese over top and top with the other half of the bagel.
Serve with your favorite sides (I did Bilinski’s Chicken Sausage + strawberries) and enjoy!
