4 servings chicken nuggets or strips (I used ButcherBox) OR 4 servings shredded rotisserie chicken
3/4 cup fire-roasted corn
1/2 cup cotija cheese
1/4 cup greek yogurt
1/4 cup mayo
1 tbsp dijon mustard
1 lemon, juiced
2 tsp worcestershire sauce
1 tsp garlic powder
2 tsp elote seasoning (I got this at Trader Joe’s)
Directions:
If using chicken nuggets/strips, cook according to package directions.
In a smaller bowl, mix together half of the cotija cheese, greek yogurt, mayo, dijon mustard, lemon juice, woresterhsire sauce, garlic powder and elote seasoning.
In a large bowl, combine the romaine, kale, chicken, fire roasted corn and cotija cheese,
