1-2 tbsp Trader Joe’s vegan pesto (it’s better than the regular pesto just trust me)
4-5 turkey slices
2 slices mozzarella cheese
2 tomato slices
1/2 cup arugula
1 tsp olive oil
2 tsp balsamic glaze
Salt & pepper
Directions:
Slice the ciabatta roll in half and toast if desired.
Smear the pesto on both halves of the bread. Top one side with turkey, mozzarella and tomato.
In a small bowl, mix together the arugula, olive oil, balsamic glaze, and salt & pepper. Add to the sandwich and then close with the second piece of bread.
