Cook packet of rice according to directions. Mix with soy sauce and chili crisp. Air-fry for about 20 minutes until crispy (mixing at the 10 minute mark).
Mix the salmon with sriracha, honey and soy sauce. Air-fry for about 25 minutes until crisp and cooked through.
While salmon is cooking, in a bowl combine diced cucumber, edamame and diced avocado. Add the soy sauce, rice vinegar, sriracha and honey. Mix well.
Build your lettuce cups: add the salmon to lettuce cups. Top with the avocado salsa and crispy rice. Enjoy!
