I’m not exaggerating when I say this – meal prep truly saves me every week. I’m not one of those people who preps every meal for the week (props if you are… I physically cannot). But just having something ready to go (even one meal) makes weekday meals SO much easier. It’s the difference between eating something balanced and homemade versus standing in front of the fridge with a spoon in a jar of almond butter.
I like to think of meal prep as “set yourself up for success” energy… not “I have to eat this sad chicken and broccoli all week” energy. Especially in the fall, when all I want are cozy, flavorful, satisfying meals that actually keep me full.
