If you’re like me, sweet potatoes at Thanksgiving have never been the star of the show. I’ve just never been a fan of the classic marshmallow-covered casserole. It’s a little too sweet and not really my thing. So this year, I decided to switch it up with something a bit more elevated (but still super easy) and a lot more flavorful. These Honey Roasted Sweet Potatoes are caramelized, cozy, and perfectly balanced with fresh thyme, crunchy walnuts, and creamy goat cheese (my favorite fall toppings if you haven’t noticed already).
