Welcome to my new series – 20-Minute Trader Joe’s Recipes – where we whip up easy, delicious, quick and healthy Trader Joe’s meals! Let’s kick things off with these flavorful Mediterranean Chicken Meatball Tacos – a quick and tasty meal for busy nights.
1 package tortillas (I used the Trader Joe’s “Carb Savy Tortillas made with whole wheat)
1/2 cup hummus
2 cups slaw mix
1 cucumber, sliced
1 cup cherry tomatoes, sliced
1/2 red onion, thinly sliced
Trader Joe’s Tzatziki (or you can make your own using 6oz Greek yogurt, 1/2 a lemon, juiced, 3 tbsp minced cucumber, and 1 tsp dried dill)
Directions:
Heat olive oil in a pan on medium heat. Add the chicken meatballs with about one tsp of harissa (or more if you like spice). Sauté for a few minutes until the meatballs become golden brown, breaking up the meatballs a little while sautéing.
Starting with the tortilla, build your taco by layering hummus, slaw mix, harissa meatballs, cucumber, tomato, red onion and tzatziki.
