Creamy Tuscan Chicken Orzo Recipe (GF/DF)
Serves 3-4
Ingredients:
1 package Banza Garlic & Olive Oil Rice (this is my secret ingredient to make this recipe gluten free and high protein! Yes, it’s technically “rice” but it is the PERFECT substitute for orzo)
2 tbsp olive oil
1/2 pint cherry tomatoes
1 lb chicken, cut into small pieces
1/4 cup sun-dried tomatoes, chopped into small pieces
1 tbsp Italian seasoning
1 cup canned coconut milk
1/2 cup veggie, chicken or bone broth
a few handfuls of spinach
salt & pepper to taste
Directions:
Cook Banza rice according to package directions.
Heat olive oil in a pan on medium heat. Once hot, add the cherry tomatoes, chicken, sun dried tomatoes and Italian seasoning. Saute a few minutes until chicken becomes golden brown and tomatoes begin to blister.
Using the back of your spatula, pop the tomatoes to let the juices out.
Add the coconut milk and broth into the pan. Let simmer for about 5-10 minutes to allow the chicken to cook through and for the liquid to thicken slightly.
Add in the cooked Banza rice and spinach. Mix until Spinach wilts.
