Indulge in winter comfort food with my Creamy Tortellini Soup, a one-pot recipe that combines tortellini, chicken sausage, and veggies for a healthy and balanced lunch or dinner. Perfect for a cozy and satisfying meal!
Creamy Tortellini Soup Recipe
Serves 4-6
Ingredients:
1/3 cup cashews (or 3/4 cup heavy cream)
3 tbsp olive oil
3 cloves garlic, minced
1 small onion, diced
4 celery stalks, chopped
3oz tomato paste
15oz crushed tomatoes
1 tsp red pepper flakes
48oz chicken broth (about 1.5 boxes)
1 package tortellini
1 package chicken sausage, sliced
2-3 cups spinach
salt & pepper to taste
Directions:
First, make your cashew cream by combining the cashews with 3/4 cup water in a blender. Blend until completely smooth. Set aside. (Skip this step if using heavy cream)
Heat the olive oil in a large pot on medium heat. Once hot, add the garlic, onion and celery. Cook about 3-5 minutes, stirring frequently, until onion is translucent.
Add the tomato paste and cook another few minutes.
Add the crushed tomatoes, red pepper flakes and broth. Turn heat to high heat bringing the liquid to a boil.
Once boiling, add the tortellini and chicken sausage. Once tortellini is cooked, stir in the spinach and cashew cream.
Serve topped with salt and pepper to taste. Enjoy!
