Honey Sriracha Salmon Bowl

Serves 4

Ingredients:

• 1 cup jasmine rice
• 1 lb salmon, cut into bites
• 1 head romaine lettuce, chopped
• 1 cup shredded carrot
• 1 small cucumber, chopped into small pieces
• 2 tbsp honey
• 2 tbsp mayo
• 1/4 cup sriracha, divided
• 1/4 cup Japanese BBQ Sauce (My favorite is Bachan’s)

Directions:

1. Cook rice according to package directions.
2. Coat the salmon with the honey and half of the sriracha. Air-fry on 400F for about 10-15 minutes (or until golden brown and cooked through).
3. In a small bowl, combine the mayo and the remaining sriracha. Mix well.
4. To serve, add rice to a bowl. Top with salmon, lettuce, carrot and cucumber. Drizzle sriracaha mayo and Japanese BBQ sauce over top.
