Meal Prep: Spicy Chicken Sausage & Butternut Squash Pasta
Serves 4
Ingredients:
1 lb chicken spicy chicken (or turkey) sausage
Pasta of choice (4 servings)
1 1/2 cups frozen butternut squash
2 cups spinach
1/2 tsp garlic powder
1 tsp oregano
1 tsp thyme
1 tsp paprika
Olive oil
Salt & pepper
Directions:
Cook the pasta according to package directions and thaw butternut squash (I microwaved the squash for about 1 minute to defrost).
Heat 1 tbsp of olive oil in a pan on medium heat. Once hot, add the chicken sausage and cook 5-8 minutes until fully cooked, breaking up the meat into small pieces as it cooks. Remove meat from pan and set aside.
Add the butternut squash to the pan and cook another ~5 minutes.
Add the chicken sausage back to the pan with the spices, spinach, pasta and 1 tbsp of olive oil. Mix until well combined and spinach wilts.
Evenly distribute the pasta into 4 meal prep containers. Cover and store in the fridge to enjoy as a quick meal during the week!
