As the weather cools and the days get shorter, there’s nothing more comforting than having delicious, nourishing meals ready to go. Fall is the perfect season to lean into warm flavors, hearty ingredients, and cozy meals that make your weeknights feel a little easier (and a lot tastier). Whether you’re back to school, back to the office, or just trying to stay ahead of the week, these five fall meal prep recipes are here to save the day!

This one is so satisfying and checks all the boxes – crispy chickpeas, roasted sweet potatoes, Brussels sprouts, quinoa, and a creamy maple-tahini dressing that brings it all together. It’s plant-based, packed with flavor, and perfect for a cozy fall lunch or dinner. I crave this one weekly!!
Okay, this salmon feels super fancy but it’s honestly so simple. The maple-walnut crust adds just the right amount of sweetness and crunch, and I love pairing it with crispy potatoes and green beans. It’s one of those meals that makes you feel like you’ve got your life together (even if you don’t 😅).
This pasta is fall in a bowl. It’s spicy, light but hearty, cozy, and comes together in one pan… AKA fewer dishes! I use chicken sausage, but you can sub in turkey sausage or even a veggie version. Bonus: it reheats like a dream.
If you like that sweet + savory combo, this bowl is for you. Chicken sausage, roasted veggies, rice cooked in bone broth, and that maple dijon sauce? Chef’s kiss. This one’s become a regular in my rotation. Tt’s simple but so so flavorful.
You can never go wrong with taco vibes. This turkey taco skillet is a one-pan wonder that’s loaded with veggies, beans, and all the classic flavors. I love eating it with rice, but it’s also great in lettuce wraps, tacos, or on top of a salad if you want to switch it up. Pro tip: It’s also a great recipe for football Sunday with chips!!
Side note!! I always get questions about what containers I use – and I swear by my glass meal prep containers with locking lids. They’re super inexpensive, keep everything fresh and are microwave + dishwasher-safe. Linking my go-to set here for you! (I ordered 3 sets so I have PLENTY.)
