Welcome! I’m Erika, a Registered Dietitian Nutritionist (RDN) and self-proclaimed foodie from Boston, MA. I graduated from Purdue University in 2016 with a BS in Dietetics/Nutrition, Fitness, & Health and continued on to complete my dietetic internship and MBA in Marketing at Dominican University.
Growing up, I was submerged into a life of health and nutrition thanks to my mom, but it wasn’t until I got older that these things truly meant something to me and I would apply them to my lifestyle. Overnight, I went from eating a diet full of steak, chicken fingers, and bacon to a predominantly plant-based diet!
Now, as a nutrition professional, I love fueling my body with an abundance of plant foods and inspiring others to do the same! Eat with Erika is my own little passion project and I hope It can be a platform to help you to live a healthier life through nutrition. The standard American diet is highly processed and predominantly animal-based. But here, I hope I can encourage you flip the switch, focusing on plants first, while keeping things balanced (and delicious of course). Most of the recipes I create are plant-based versions of classic comfort foods, but there’s also a little bit of everything so everyone can find something they love!
