Italian Chopped Pasta Salad
Serves 4-6
Ingredients:
1 box Banza Pasta
1 cup iceberg lettuce, chopped
1 cup radicchio, chopped
1 15 oz can chickpeas, drained and rinsed
4 oz salami, chopped
1 cup cherry tomatoes, sliced
½ cup red onion, thinly sliced
¼ cup olive oil
¼ cup red wine vinegar
½ lemon, juiced
1 tsp dijon mustard
½ tsp garlic powder
1 tsp italian seasoning
Salt & pepper to taste
Directions:
Cook pasta according to package directions. Drain and rinse with cold water.
In a small bowl, mix together olive oil, red wine vinegar, lemon juice, dijon mustard, garlic powder, italian seasoning, and salt & pepper to taste.
In a large bowl, combine pasta, lettuce, radicchio, chickpeas, salami, cherry tomatoes and red onion. Pour dressing over top and toss to combine.
