Discover the ultimate high-protein, no-bake dessert with this “Ice Cream” Date Bark recipe, featuring creamy cottage cheese, dates, and a tempting blend of peanut butter, walnuts, and dark chocolate. A healthy treat that satisfies your cravings while packing a protein punch.
High-Protein “Ice Cream” Date Bark Recipe
Serves 6-8
Ingredients:
1/2 cup cottage cheese, no salt added
2 tbsp maple syrup
1 tsp vanilla extract
1 12oz box of dates, pitted
1/2 cup peanut butter
1/3 cup walnuts, crushed
1 cup dark chocolate chips
1 tbsp coconut oil
Flakey sea salt
Directions:
Add cottage cheese, maple syrup and vanilla extract into a blender. Blend until completely smooth. Set aside.
Add chocolate chips to a bowl with coconut oil. Microwave on 30 second intervals until the chocolate is completely melted. Set aside.
Line a baking tray or large plate with parchment paper.
Slice each date open so they lay flat (having the inside of the date pointing up). Place all of the dates on the parchment paper and make sure they are touching so it turns into one large piece of “bark”. If needed, you can use a cup to flatten the dates into a thin layer.
Drizzle the peanut butter over the dates and use a knife to spread evenly across.
Repeat this process with the cottage cheese mixture.
Top the layer of cottage cheese with the crushed walnuts and then drizzle the chocolate overtop.
Sprinkle some flakey sea salt on top and set in the freezer for about 2-3 hours.
