8-12 tortillas (I used the Almond Flour Tortillas)
1 lb ground turkey (you can also use chicken, beef or pork)
1 tbsp olive oil
1/2 tbsp Trader Joe’s Za’atar Seasoning
1 cucumber, diced
1 large tomatoes, diced
1 lemon
1/4 red onion, diced
1/3 cup hummus
1/3 cup tzatziki (hot take: I think the vegan version from Trader Joe’s is better)
Directions:
Add the turkey, za’atar seasoning and a dash of salt & pepper to a bowl. Mix well. Add a big spoonful of the turkey mixture to each tortilla, flattening it down into an even layer.
Heat olive oil in a nonstick pan on medium heat.
Once the pan is hot, add a tortilla (meat side down) and cook about 3 minutes. Flip for another minute or so until the tortilla bottom is golden and the meat is fully cooked though. Remove from pan. (Repeat until all of the tacos are cooked)
In a bowl, combine chopped cucumber, tomatoes and red onion. Add a squeeze of lemon juice, a drizzle of olive oil and a dash of salt & pepper. Mix well.
Top each taco with the cucumber mix, hummus and tzatziki. (I last minute added some feta cheese too!). Enjoy!!
