Looking for a quick, flavorful meal that’s both comforting and satisfying? This Crispy Chicken Fried Rice is a game-changer! Packed with protein, veggies, and a crispy texture that’ll have you hooked, it’s the perfect weeknight dinner or meal prep option. With just the right amount of spice from a simple homemade sriracha mayo, this recipe is sure to become a regular in your rotation!
Heat 1/2 tbsp olive oil and 1/2 tbsp butter in a large non-stick pan. Once hot, add the chicken and cook a few minutes each side until browned and fully cooked through.
Into the pan with the chicken, add the remaining butter and olive oil, cooked rice, cauliflower rice, peas, carrot and soy sauce. Mix well.
Push the rice to the outside of the pan, creating a well in the center. Crack the eggs into the center and scramble. Once eggs start to cook, mix together with the rice.
Let the rice sit for a few minutes to let the bottom crisp up and then mix well (I did this a few times so get it extra crispy!)
While rice is crisping, mix together the sriracha and mayo to create spicy mayo. If needed, add a tsp of water at a time until it becomes a drizzly consistency.
Evenly distribute the fried rice to 4 meal prep containers. Top with spicy mayo and chili crunch if desired. Store in the fridge and enjoy as a quick meal during the week!
