After a few weeks of pasta, spritzes, and wedding bliss in Italy (truly the best trip of my life), I came home feeling so grateful, but also really excited to get back into my kitchen. As much as I loved every bite abroad, there’s something comforting about returning to the meals that make me feel good, especially after traveling.
These are the summer recipes I’ve been turning to this week: simple, flavorful, and packed with nourishing ingredients that help me feel grounded and back in my rhythm. If you’re looking for healthy meal ideas that are easy to make and actually satisfying, these five are in heavy rotation for me right now (and have been for a while).
Sweet, spicy, and so satisfying. This is one of my all-time favorite meals, and the combo of flavors never misses. It’s protein-packed, nourishing, and feels like the perfect “back to real life” bowl after weeks of vacation indulgence. I’ve made this one on repeat for years and I’m still not sick of it.
This one gives me all the deli sandwich vibes without the bread, and it always hits the spot when I want something salty, crunchy, and satisfying. It’s one of my favorite lazy-girl lunches. So easy to throw together, especially when I want to keep things light but still crave something savory.
After a lot of pasta and gelato (no regrets), this salad was exactly what I needed. It’s fresh, crunchy, herby, and full of flavor (and that crispy rice texture is everything). If you’re trying to eat more veggies but want them to actually taste good, this one is a must.
Coming home to a fridge full of random Trader Joe’s finds is kind of my love language, and this bowl makes the most of all of them. It’s my version of a classic Cava order: bold Mediterranean flavors, creamy dips, crunchy veggies, and a little something spicy. Always hits, never boring.
These are fun, flavorful, and totally satisfying. I love the Mediterranean twist with all the herbs, spice, and creamy toppings. They feel a little elevated but are secretly so easy. Perfect for when I’m craving something fresh and a little different from the usual lunch salad.
