Okay, let’s be honest – I’m not fully in fall mode yet. It’s still pushing 85° in LA most days, and I’m basically sweating in a sweater because I want it to feel like autumn. But even if the weather hasn’t caught up, my cravings definitely have. This time of year, I start easing into cozier meals. A little comfort here, a little spice there (without going full-on soup season just yet). So, I pulled together a mix fall dinner ideas: a few that are perfect for these warmer, in-between days, and a couple extra cozy dinners I cannot wait to make once the temps finally drop (manifesting a little bit even though I’ll probably regret that later).
Whether you’re ready to turn on the oven or still eating dinner in a tank top with the AC on, there’s something here for your fall dinner mood.

This one is a go-to when I want something cozy but not heavy. The salmon is glazed in a super flavorful miso sauce, and it all comes together with jasmine rice, bok choy, and green onions. It’s light but hearty, a little salty, a little sweet, and just really hits the spot. Bonus: it looks fancy but takes like 20 minutes.
This one is so good for those nights when you want a comfort meal but don’t want to feel blah after. The pasta is tossed in a dairy-free cashew-based buffalo sauce and loaded with juicy chicken bites. It’s cozy, it’s a little indulgent, and it reheats like a dream! (A perfect meal prep if you ask me!!)
Listen. I love a big bowl of pasta, but sometimes I want the vibe of spaghetti and meatballs without the food coma. This version swaps pasta for roasted spaghetti squash and keeps it super simple with jarred sauce, spinach, and your fave pre-meatballs (I’m a big fan of Amylu). Easy, delicious, and secretly healthy.
This one’s a classic for a reason. It’s packed with chicken, peas, carrots, and celery in a creamy, herby broth, and topped with gluten-free biscuits (or regular biscuits – whatever you’re feeling) that get golden and fluffy in the oven. I make this when I want something that feels super homey… it’s always a hit.
You already know chili had to be on this list. If you have yet to try sweet potato in your chili, it’s a MUST. This one is cozy, filling, and packed with flavor! I love making a big batch and eating it all week. It’s one of those meals that gets better every day.
