I’m heading back to the East Coast for the holidays, and honestly, it’s making me really crave cozy dinners. Not the “I’ll just throw a frozen meal in the microwave” kind of cozy… actual meals that make you feel like you’re wrapped in a blanket, even if it’s 70 degrees in LA. These are the kind of dinners you can throw together after work or when you want something hearty without feeling like you spent all day in the kitchen. Perfect for winter vibes, whether you’re snowed in or just pretending you are.

This lighter twist on classic spaghetti and meatballs swaps pasta for delish roasted spaghetti squash… but don’t worry, all the savory satisfaction remains. Pre-cooked chicken meatballs simmered in your favorite pasta sauce makes this dish comforting and so easy to make. It’s a perfect weeknight meal that feels both cozy and more nourishing.
