Enjoy a delicious and easy weeknight dinner with this Vegan Teriyaki Tofu recipe. This plant-based dish features crispy tofu, colorful bell peppers, and fresh spinach, all tossed in a homemade teriyaki sauce. Served over jasmine rice, this quick and flavorful air-fryer meal is perfect for a satisfying dinner.
Air-Fryer Teriyaki Tofu Recipe
Serves 3
Ingredients:
1 block of firm tofu, cut into equal size squares
2 tbsp olive oil or sesame oil
1 cup carrot, sliced
1 bell pepper (any color)
1 small onion, sliced
2 cups spinach
1 cup jasmine rice
3 tbsp soy sauce
2 tbsp maple syrup
2 tbsp rice vinegar
2 tbsp fresh ginger, minced
2-3 garlic cloves, minced
1 tbsp corn starch + 1/4 cup water
Directions:
Cook rice according to package directions.
Place a paper towel under your tofu and another one on top. Press down to release as much water from the tofu as you can. Transfer tofu to a bowl and toss with 1 tbsp olive or sesame oil. Air-fry for about 10 minutes on 375F (5 minutes each side) or until crispy.
While tofu is cooking, combine soy sauce, maple syrup, rice vinegar, ginger, garlic, cornstarch and water in a bowl. Mix well and set to the side.
When tofu is about halfway done, heat remaining oil in a pan. Once warm, add the onion, carrot and bell pepper. Cook about 3-5 minutes.
Add the tofu to the pan along with spinach and the teriyaki sauce. Stir to combine and cook another 1-2 minutes or until sauce has thickened and spinach has wilted.
