One-Pan Lemon Chicken Dinner Recipe
Serves 4
Ingredients:
1 lb chicken breast
1 bunch of asparagus
1 lb bag of baby potatoes, cut into fourths
2 lemons
3 tbsp olive oil
2 tsp garlic powder
Salt & pepper
Red pepper flakes (optional)
Directions:
Preheat oven to 375 F and line a baking tray with aluminum foil.
In a small bowl, mix together the juice from 1 lemon , 1 tbsp olive oil, 1 tsp garlic powder and salt & pepper. Place chicken on the pan and coat both sides in the lemon/olive oil mixture.
Toss potatoes with 1 tbsp olive oil, ½ tsp garlic powder, and salt & pepper. Add to pan.
Toss asparagus with remaining olive oil, garlic powder and red pepper flakes (optional). Add to pan.
Once oven is preheated, bake for 15 minutes. Remove asparagus from oven. Leave chicken/potatoes in the oven and switch the oven to a high broil for about 7 minutes (or until chicken is fully cooked through).
